Spicy Dove Nuggets

  • 16 to 20 dove breasts, skinned and filleted off the breast bone
  • 2 cups of milk
  • 2 eggs
  • 2 cups of all-purpose flour
  • crushed black pepper
  • fajita seasoning
  • steak seasoning
  • oil (peanut or canola)

In a large bowl, beat the milk and eggs together.

Season the breasts to taste with the pepper, fajita seasoning and the steak seasoning.

Soak the breasts in the milk mixture for at least 30 minutes.

Heat the oil over medium heat in an iron skillet.

Place the flour in a large ziploc-style bag and shake the breasts in the flour. Re-dip them in the milk, and then shake again in the flour.

Cook the breasts in the preheated oil until they are golden brown, turning turning them halfway through the process.

Use the pan drippings to make a cream gravy. Season the gravy with more of the pepper, fajita seasoning and the steak seasoning. You might also try adding a touch of cayenne pepper if you have a taste for something a little more Tex-Mex.

Serve with mashed potatoes, vegetables and biscuits, and a cold beer.
