Smothered Dove
This simple recipe allows the dove's natural, rich flavor
to stand out. Serves six.
Ingredients:
- 12 quail
- 6 tablespoons of butter
- 3 tablespoons of all-purpose flour
- 2 cups of chicken broth
- 1/2 cup of sherry wine
- salt and pepper
Directions
Season the birds with salt and pepper, and then brown the birds in
the butter, using a heavy skillet. Place the birds in a baking dish,
and set aside.
Add the flour to the butter in the skillet, and stir to combine. Slowly
add the chicken broth, sherry, and salt and pepper to taste. Mix well,
and pour over the birds in the baking dish.
Cover the birds and bake at 350F for about 45 minutes or an hour, or until
the birds are clearly done. Serve on a bed of rice with some savory
vegetables. A glass of crisp white wine - like a Sauvignon Blanc or dry
Pino Grigio will be delightful.
